Aromas: A wonderful fruit-driven wine. The fresh scent of strawberries is first soon mingled with those of crème’ brulee, rich loam earth, and truffles. Some current and darker fruit notes linger in the glass.
In The Mouth: A delicious wine. The same fruit-driven components appear again in this nicely balanced, mid-weight wine. There is a lively acidity on the front of the palette that is quickly followed by elements of strawberries and truffles. Some white pepper and almost floral flavors appear and carry through the finish.
This wine was aged in neutral French oak barrels for 16 months.
We wanted to really showcase what the natural fruit characteristics of Grenache are, and has grown by us on Cobb Mtn. To that end, we are hands-off in the cellar when possible allowing Native yeasts to complete the fermentation process before being inoculated for ML in the aging barrels.
We felt that by the 15-month mark in barrel the resulting wine had spent enough time with us and was ready for the next step, to be bottled …..and enjoyed, Salute’
